Production Details Grapes were hand-harvested at full ripeness. The must fermented at low temperature in stainless steel; fermentation was stopped by cooling when alcohol reached 7–8%, after which the wine was filtered and aged for a few months in German oak barrels. The page lists the wine as organic. Its sugar entry reads 38 g/100 ml as published; this anomalous unit was not converted into residual_sugar_gl. The stated 7–8% fermentation-stop point also differs from the separately reported finished alcohol of 8.5%.
Tasting Notes Off-dry, with very fresh acidity, intense tropical fruit and slate notes, followed by a long, delicate finish.
Food Pairing Aperitif; spicy Asian dishes; starters; small dishes and accompaniments.
