Production Details After pressing, the juice settled in tanks overnight without enzymes and was then decanted. Spontaneous fermentation continued in steel tanks until spring and was stopped at the desired sweetness by cooling the tanks and adding sulfur dioxide. The wine was then separated from its lees and rested for a few additional months before bottling.
Tasting Notes Youthful and lively fruit, ripe apricot, and balancing acidity; Alko additionally identifies yellow plum, apple, peach, and citrus notes.
