Production Details Traditional bottle fermentation (méthode traditionnelle) with 5 years maturation on lees. Hand riddled and disgorged. Base wine ages 10 months before bottle fermentation. Made from almost 30-year-old Pinot Noir vines from a small 0.16-hectare (1,600 m²) parcel. Grapes picked early to preserve crisp freshness. Blanc de Noir pressing method.
