Production Details Fruit from several biodynamically cultivated parcels with an average vine-age range of 20–50 years was destemmed. Fermentation and vatting lasted approximately two weeks in stainless steel with an indigenous-yeast pied de cuve, followed by pneumatic pressing. The wine matured for six months in oak barrels with little new oak and was bottled, after light filtration, in the spring following harvest.
Tasting Notes Cherry, redcurrant, sweet spices and menthol on the nose; fresh raspberry and blackcurrant on the palate, with saline and iodine notes.
