Production Details The fruit was partially destemmed and received gentle punch-downs. Maturation lasted approximately 14 months in oak barrels, with a small proportion of new barrels.
Tasting Notes Clear ruby; fresh morello cherry, raspberry, peony, orange peel and incense; silky and airy, with vibrant acidity, fine tannins, mineral and saline character, and a long finish recalling warm earth, sweet spices and dried rose.
Food Pairing Roast pigeon with cherries; grilled salmon trout with Alpine herbs; wild-mushroom ravioli.

Production Details The harvest was destemmed and received a reduced number of punch-downs. The wine was matured for 8 months in Burgundian barrels.
Tasting Notes Cavesa describes a slightly purplish ruby wine with liquorice, pepper, hearth and morello cherry, a tight precise structure and fine sustained tannins. Mes Vendanges additionally notes lightly smoky aromas, wild strawberry, raspberry, a velvety palate and very fine tannins.
Food Pairing Rack of veal with truffles; pigeon tagine; Challans duck with figs.
