2018 Technical Specifications

Alcohol 14.6%
Grape Varieties 100% Marsanne Blanche
Drinking Window More than 10 years
Classification AOC Valais
Region Valais
Soil Granite
Vineyard Yield 20 hL/ha
Sites Fully Les Claives
Fermentation Vessels Stainless-steel tanks
Pressing Method Whole-Cluster Pressing
Indigenous Yeast Yes
Unfined Yes
Production Details Hand-harvested fruit from a non-irrigated, certified organic and biodynamic vineyard; planting density 8,000–12,000 vines/ha and elevation 450–650 m. After settling, the must underwent slow stainless-steel fermentation; the wine then spent 18 months on its lees in barrels. Residual sugar was reported as less than 3 g/L and the recommended serving range was 8–10°C. The importer sheet says the vines were planted in 1920, while the producer’s current vineyard page says its oldest estate Marsanne was planted in 1924; no canonical vine-age value is proposed because of that discrepancy.
Tasting Notes Dried apricot, cedar, liquorice, mountain honey, raspberry eau-de-vie and white truffle; balanced and saline.
Food Pairing Swiss Gruyère; chicken with morels; lightly creamed chanterelle casserole.
