Production Details This first vintage was assembled from 13 barrels of Sassi Grossi 2022 and 13 barrels of Cayas 2022. Sassi Grossi underwent two weeks of maceration at 28°C, malolactic fermentation, transfer to Burgundy barrels, and 18 months of maturation with one racking. Cayas underwent 10 days of pre-fermentation maceration at 8°C, followed by 20 days of fermentation with punch-downs, malolactic fermentation in Burgundy barrels, and 20 months of maturation. The technical sheet says Cayas received one racking, while the current Germanier product page says it matured without racking. The wines were blended in Mendrisio on 5 July 2024 and bottled there on 29 July 2024.
Tasting Notes Ruby red with violet hues; harmonious, complex and intense, with blueberry and other small black-fruit notes, black pepper, light roasting and menthol nuances; fresh, firm attack, good structure, ripe sweet tannins, sapidity and a very long persistent finish.
Food Pairing Roasts, braised or stewed meat, venison and other game, red meat, and aged cheese.
