Production Details Hand harvested, individually berry sorted, destemmed. Crushed into 0.5 tonne open fermenters. Hand plunged twice daily until fermentation complete, extended time on skins until tannins soften. Gravity filled to French oak barrels, completed malolactic fermentation in cool underground cellar.
