Production Details Hand-picked fruit chilled overnight, sorted and destemmed into half-tonne open-fermenters with whole berries retained to encourage perfume. Frozen Viognier skins added to some fermenters. Aged 15 months in French oak barriques, 30% new oak, before blending and bottling.
