Production Details Winemaker: Peter Caldwell. The grapes were handpicked; after whole-bunch pressing and settling, separate juice fractions were fermented in French oak puncheons and a ceramic egg, with lees stirring and mostly completed malolactic fermentation before blending and bottling.
Tasting Notes Nectarine, white peach, lemon curd, grapefruit, native bushland aromatics, seashell texture, fine acidity, subtle French-oak tannins, and a long, fine fruit finish.
Food Pairing Delicate soft-fleshed fish such as flounder with lemon-parsley butter sauce and aromatic rice; alternatively couscous with fresh garden greens.
