The early-morning harvest was pressed, divided between stainless steel and seasoned French oak (10% of the blend), cold-settled, inoculated with cultured yeast and cool-fermented for just under one month. At sugar dryness, the tank component's lees were stirred weekly; the oak component underwent spontaneous malolactic fermentation and fortnightly bâtonnage. Total maturation was 10 months before filtering and bottling. The technical panel reports “TA 6.5” without a unit or acid-equivalent basis, so it is not represented as total_acidity_gl.
Tasting Notes Pale straw to light straw-yellow; lemon zest, pear, white peach, floral notes and minerality; fresh and textured, with grapefruit zest, almond and a gentle savoury note.

Production Details The Fiano vines were planted at the Upper Tintara Vineyard in 2011. The early-morning harvest was pressed, transferred to stainless steel and old French oak, cold-settled, inoculated with cultured yeast and cool-fermented for just under one month. At sugar dryness, the tank component's lees were stirred weekly; the oak component underwent spontaneous malolactic fermentation and fortnightly bâtonnage. Total maturation was 5 months before filtering and bottling. The technical panel reports “TA 7.6” and “RS 0.35” without units or an acid-equivalent basis, so neither is represented in a canonical g/L analytical field.
Tasting Notes Light straw; nashi pear, white flowers and citrus; fresh minerality with a textured, balanced palate of green apple and pear and a long finish.
