Production Details Fruit was destemmed, crushed and chilled, then bucketed into the 1863 slate fermenters. Natural fermentation began after about three days; the ferment was hand-plunged three times daily for ten days. Near sugar dryness, the wine was pumped out and the skins removed and pressed. The producer's winemaking text says maturation was for 16 months in seasoned French oak barriques, whereas an embedded Halliday Wine Companion review specifies 20% new French oak; the oak-age descriptions therefore remain an explicit source-level conflict. The wine was released in May 2026.
