Production Details Hand-picked fruit was hand-plunged in open fermenters for 8 days; 50% was whole bunch and the remainder whole berry. It was pressed to seasoned hogsheads for secondary fermentation and four months of maturation, with no acid additions or fining. Production was limited to 250 cases. The page lists TA as 5.8 but supplies neither a unit nor an acid-equivalent basis.
