Production Details Fruit from the single vineyard was bunch-thinned during ripening to remove overripe and underripe clusters. It was Selectiv® harvested as whole berries, transferred directly to open fermenters without destemming or crushing, and gently hand-plunged twice daily throughout a 10-day fermentation. The wine was pressed to seasoned oak and matured for 8 months before bottling, with no additions or fining and light filtration at bottling. Production was 450 cases. The producer also reports TA as 6.8 but supplies neither a unit nor analytical basis, so that figure cannot be normalized as total acidity in g/L.
Tasting Notes Fresh and lifted, with pomegranate, cranberry, wild herbs and savoury spice; bright sour cherry, redcurrant and wild strawberry on a medium-bodied palate with youthful tannins and tight natural acidity.
