Production Details The crushed and chilled fruit remained on skins for 6 hours before pressing. Fermentation was conducted cold, followed by three months on yeast lees. Production was limited to 650 cases. The producer also reports “TA 4.5” but supplies neither a unit nor an analytical basis, so it is not proposed as canonical total acidity.

Production Details The crushed and chilled fruit received 6 hours of skin contact before pressing. It was fermented cold and then held on yeast lees for three months. The wine was released in November 2022. The sheet also reports “TA 5.2” without a unit or analytical basis, so that figure is retained contextually rather than proposed as canonical total acidity.
