Production Details Fruit was destemmed as whole berries into open fermenters and plunged twice daily for 10 days, then pressed to complete fermentation and malolactic fermentation in new and seasoned French oak. Parcels remained separate until blending after 20 months' maturation. The producer also reports TA 6.70 but supplies neither a unit nor an acid-equivalent basis, so it cannot safely be stored as total_acidity_gl.
