Production Details Destemmed whole berries were cold soaked for 3 days under inert gas, fermented in open fermenters at a reported 22–28°C, plunged three times daily and given a gentle pumpover during peak fermentation. The wine remained on skins for 8 days, was pressed directly into new and one-year-old French oak hogsheads, and matured for 18 months before the best barrels from each batch were selected for the final blend.
