Production Details The fruit was destemmed but not crushed, placed in open fermenters and cold-soaked under inert gas for 3 days. Fermentation proceeded at 22–28°C with plunging three times daily and a gentle pump-over during peak fermentation. After 8 days on skins, the wine was pressed directly into new and one-year-old French-oak hogsheads, matured for 18 months, and assembled through selection of the best barrels from each batch. The page also reports TA as 6.3 but does not state its unit or analytical basis, so it is not proposed as an unqualified total_acidity_gl value.
Tasting Notes Dense and inky; powerful, brooding aromas of dark cassis, spice and mocha oak; full-bodied and balanced, with plum, blackberry, liquorice, fine-grained elegant tannins and a long finish.
Critics Ratings Sam Kim/Wine Orbit 95 points; Ken Gargett/Wine Pilot 96 points; James Halliday Wine Companion 92 points; Wine Showcase Magazine 96 points; James Suckling 92 points
