Production Details The 78% cold-settled portion was racked and fermented at 15°C in stainless steel with aromatic yeast strains. The remaining 22% underwent wild fermentation on full solids in new French barriques. Components received regular lees stirring for 3 months, then were blended, stabilised, filtered and bottled without fining.
Tasting Notes Pale straw with a youthful green hue; passionfruit, guava, kaffir lime, lemongrass, fresh-cut herbs, citrus blossom, lemon curd and spice; bright and finely textured, with green mango, grapefruit, lime zest and citrus pith
