Production Details The 85% majority was cold settled, racked and fermented at 15°C with aromatic yeast strains; the other 15% was wild fermented on full solids. Components underwent regular lees stirring, then were blended, stabilized, filtered and bottled without fining.
Tasting Notes Pale straw with green hues; passionfruit, gooseberry, freshly cut lime, white nectarine, elderflower and crushed herbs; tropical fruit, lime zest, grapefruit, natural acidity, lingering citrus and mineral notes.
