Production Details Fruit was destemmed and transferred as whole berries to stainless-steel rotating fermenters; fermentation used 100% wild yeast, gentle pre-fermentation soaking, open tops and aeration; batches were pressed after fermentation, followed by limited racking.
Tasting Notes Deep ruby with a purple tinge; blood plum, blackcurrant, graphite, bay, sage, violets, spicy charcuterie, mushroom and Mexican chocolate; soft, fresh and juicy with dusty tannins, bright acidity, a powdery dry finish and native-potpourri notes
