Production Details Bottle-fermented sparkling wine made by the méthode traditionnelle; juice was cold settled and racked before inoculation, base wines were blended, lightly bentonite-fined and cold stabilised, then tiraged for secondary fermentation in bottle.
Tasting Notes Meyer lemon, lime blossom, apple core, ripe pear, coastal saltbush, Granny Smith apple, freshly cut lemon, yeast-derived complexity, chalky minerality and apple skin; fine phenolics, persistent delicate bead, long dry textural finish.
