Production Details Juice was floated, racked off gross lees, warmed, inoculated with pure yeast cultures, and fermented at 12–13°C for two weeks. The barrel-fermented portion received fortnightly bâtonnage. Parcels were assembled from tank and barrel, stabilized, and bottled.
