Production Details Juice was floated, bottom-racked off gross lees, warmed, inoculated with pure yeast cultures, and fermented at 12–13°C for two weeks. Selected parcels were then assembled, stirred, fined, stabilised, sterile-filtered, and bottled.
Tasting Notes Tahitian lime, citrus blossom, lemon pith, subtle green apple, chamomile, Thai basil, cut lime and lemon, savoury undertones, mineral character, and a talc-like finish; energetic perfume, fine delicate palate, zesty finish, and finely boned acidity.
