Production Details Juice was cold-settled, clarified, racked and inoculated. After fermentation and maturation, barrel and tank components were blended, lightly fined, stabilized and sterile-filtered before bottling. Fining agents were bentonite, PVPP and milk.
Tasting Notes Jasmine, kaffir, daisy flowers, fennel, lemon, lime, black pastille, guava, pistachio, blanched almond, cardamom, grapefruit, native lime, granita, ocean spray, lively acidity, savory texture and a long talc-like finish.
