Production Details Fruit was picked during the cool of night, processed immediately, settled in tank, and racked off heavy solids. The wine was inoculated; at 8 Baumé, 20% of the juice was transferred to older French oak hogsheads.
Tasting Notes Mandarin, apricot kernel, jasmine, honeysuckle, lime, kiwi fruit, musk, subtle creaminess, delicate spicy acidity; dry, refreshing and vibrant.
Food Pairing Ceviche, scallops, or any white-fleshed fish dish.
