Production Details Sourced from 3 vineyards running the length of the Margaret River region for complexity. Fruit mostly Gingin clone with portion of 95 clone. Cooler/southern vineyard brought acidity and lime qualities; warmer vineyards brought citrus and generosity. Fruit picked in cool of night and processed immediately. Juice run off to combination stainless steel and new French oak. Wild ferment encouraged in barrels; tank portion inoculated. Wine spent 6 months on lees for mouthfeel and texture while retaining freshness before blending and bottling. Fermentation: 90% stainless steel, 10% oak.
