Production Details Fruit was chilled overnight and hand-sorted, then divided into three lots: 30% whole-bunch fermentation, 100% whole-berry fermentation, and crushed-berry fermentation. Fermenters received a five-day cold soak before fermentation, followed by 20 days fermenting on skins.
