Production Details Long, cool natural fermentation; hand-bottled in early April 2025 while fermentation remained active; fermentation continued in bottle to create natural effervescence; made with no additions or preservatives.
Tasting Notes Dusky peach-skin pink fading into rose and straw; gardenia, waxy white flowers, rose petals, strawberries, apple and ripe pear; stone fruit, pear, wild red berries, redcurrants, citrus blossom and Buddha’s hand lime; fresh, textured, savory, delicately mineral finish.
Food Pairing Baked Camembert with garlic and rosemary, served with hummus, pistachio and dukkah
