Production Details Both varieties were harvested at night; juice was clarified by cold settling for several days, fermented at low temperature to dryness, then minimally fined and filtered before bottling.
Tasting Notes Delicate pale salmon; red fruit, rose petal, crushed limestone and salinity; pomegranate, cranberry, goji berry, pink salt and spices, with crunchy acidity and a crisp mineral lift.
Food Pairing Grilled halloumi with thyme and honey; confit duck breast with pomegranate; prosciutto-wrapped asparagus.
