Production Details After pressing, some juice was kept whole at 0°C with daily lees stirring for 10 days, while other juice settled briefly. Following cool fermentation, batches remained unsulfured for several weeks under a tasting-guided stirring regime.
Tasting Notes Pale gold with lime hues; yellow florals, rich citrus and chamomile; yellow grapefruit, finger lime, green mango, crushed seashell/chalk and a long saline finish.
Food Pairing Crispy chicken Caesar salad with buttermilk dressing; globe artichoke and ricotta agnolotti; goat's-cheese crostini with fresh figs and honeyed walnuts.
