Production Details Two vineyard blocks were hand-picked early in the morning; fruit was destemmed, hand sorted, combined, gravity-transferred, inoculated with selected yeast, and fermented without crushing the berries using gentle cap management. Bottled in October 2024.
Tasting Notes Deep ruby and garnet; wild cherry, blueberry, violet, lavender, cassis bud, smoked paprika and toasted cumin; juicy, bright and powerful, with glossy, supple tannins.
Food Pairing Beef brisket dumplings in bone broth; black sesame burger with miso sauce; or bresaola with Parmigiano Reggiano and rocket.
