Production Details Hand-picked using a one-plot, one-batch approach; cooled overnight; whole-bunch pressed; barrel-fermented with all solids using either wild or selected yeasts; briefly held without sulphur after fermentation; lees matured for ten months and blended in December.
Tasting Notes Bright pale lemon; struck flint, sea spray, acacia, jasmine, lime pith and shortbread aromas; yellow stone fruit, cumquat, nashi pear, pink salt and crushed-seashell flavors; fine phenolics, satin texture and mouthwatering acidity
