Production Details Dry-grown, low-yielding bush vines; canopy management, fruit thinning and shoot positioning performed by hand. Grapes were hand harvested, destemmed, hand sorted and gravity transferred; daily tasting guided extraction, and only the best pressings were blended back.
Tasting Notes Deep ruby; lavender oil, quince, maraschino cherry, clove, nutmeg and sweet spice aromas; rich, concentrated and structured, with dried lavender, bramble, cacao, candied cherry and confit orange; lingering spicy, fruity warmth.
Food Pairing Slow-braised beef short ribs with balsamic plum glaze; portobello mushroom steaks; blue cheese with spiced fig jam.
