Production Details Heritage Wallcliffe fruit was handpicked in the early morning, destemmed, hand sorted and lightly crushed. Individual batches fermented with selected yeasts in closed-top fermenters, with extraction adjusted through daily tasting. Batches were basket pressed and pressings retained separately. The wine was estate bottled in January 2024.
Tasting Notes Deep ruby; blue fruits, sweet blackberry, soft florals, leather and briar; rich and dense yet elegant, with graphite tannins, black pastilles, cassis, wild blueberries and bay leaf.
Food Pairing Seared ribeye with mustard; balsamic-braised leek risotto; charcuterie with Manchego and aged Cheddar.
