Production Details Handpicked fruit underwent full carbonic maceration. A small addition of fermenting juice was introduced to protect the berries and initiate fermentation; after pressing, fermentation finished in barrel. Bottled 31 July 2025.
Tasting Notes Bright garnet; dark cherry, forest flowers, spices, gamey notes and red confectionery; stewed dark fruit, herbal and brambly complexity, earthy umami, soft fine tannins, and a lingering subtly smoky finish.
Food Pairing Charcuterie, pizza, curries, barbecue, and spiced chicken dishes.
