Production Details Grapes were harvested in the cool early morning, taken directly to the winery and crushed. After draining, the wine underwent cool fermentation with selected Chardonnay yeast; it was then transferred to French oak hogsheads, matured with lees stirring, assembled from selected parcels, fined and filtered before bottling.
Tasting Notes Brilliant pale straw with youthful green; honeydew melon, young apricot, lychee, ripe lemon curd, toasted-oak lactones and mineral flint; peach and nectarine, a soft smooth mid-palate, biscuit and pistachio, perfumed oak toast and crisp wet-stone acidity.
Food Pairing Raw or lightly cooked shellfish such as crab and prawns; steamed or grilled fish; goat-cheese tortellini with seared prawns; or free-range chicken thigh with corn sauce and chilli oil.
