Production Details Selectiv® harvested early in the morning before sunrise; the fruit underwent immediate cold pressing to limit phenolic extraction, followed by 72 hours of cold settling, racking off the lees, and fermentation with mixed yeast cultures in seasoned French-oak barrels and stainless-steel fermenters.
