Production Details The exact-vintage vendor page states that fermentation used the grapes’ own natural yeast without added sugar, enzymes, flavour enhancers or cultured yeast. Its separate assertion of only half a year in large old wooden casks conflicts with the producer’s statement that this 2011 wine was bottled in 2017, so that maturation duration is withheld.
Tasting Notes Christina Hilker, 26 April 2018: citrus, preserved apricot and mirabelle, lemon zest, lily-of-the-valley oil, honey, sweet brioche, anise and cardamom; juicy fruit sweetness, lively acidity and fine bitterness.
Food Pairing Carrot-herb crêpe with honey, lemon and watercress pesto; parsley-root buns with bacon, oregano and fried onion; salmon fillet with salsify crust on red Camargue rice.
