Production Details 100% hand harvest. No destemming, 3-6 hours skin contact. Fermentation in cask and stainless steel tanks (500-5,000L) for 5-10 days at 20-23°C with natural and cultured yeast. Minimum 4 months lees aging, no bâtonnage. Bottled March 2021, released April 2021. Yield restricted to maximum 9,000 kg/ha. Single vineyard, no blending.
