Production Details Fruit came from a single, steep, extremely high-altitude terraced vineyard. Vineyard work followed sustainable and increasingly organic principles without insecticides or herbicides, and the grapes were hand-picked. After maceration, the wine fermented spontaneously in a concrete egg and was bottled without filtration or sulfur addition.
Tasting Notes Open and accessible; intense citrus, chamomile, pistachio, ripe quince, roasted-nut aromas and garden leek; multilayered and complex, structured and elegant, with racy acidity, spice and a long finish.
Food Pairing Aperitif; smoked-fish aspic; char tartare; salt-baked branzino with rosemary potatoes; prosciutto with melon; ricotta cannelloni; sushi and sashimi; vegan mapo tofu; or Ca Kho To.

Production Details The approximately 60-year-old, high-altitude vineyard was planted in the 1960s and was sustainably farmed without insecticides or herbicides. Grapes were hand-picked during a very short harvest window at extremely low yields. After approximately 12 hours of skin contact, the wine fermented spontaneously in 1000 L concrete eggs with a small proportion of whole bunches; it was bottled unfiltered with a small sulfur addition.
Tasting Notes Open and accessible, with intense citrus and smoky spice; multilayered and powerful, with an elegant body, lively acidity, spice and a long finish.
Food Pairing Aperitif; smoked-fish aspic; char tartare; salt-baked branzino with rosemary potatoes; prosciutto with melon; ricotta cannelloni; sushi and sashimi; vegan mapo tofu; or Ca Kho To.
