Production Details The vineyards were farmed sustainably and increasingly organically, without insecticides or herbicides, and harvested by hand. Selected Wachau sites were managed specifically for sweet-wine production and protected from birds with nets. Botrytised material—especially Riesling—was balanced with a proportion of healthy grapes to preserve fruit and precision. Fermentation was controlled and maturation occurred in stainless steel. The finished-wine sheet reports acidity as 8.6‰; this has not been converted into an unqualified g/L total-acidity value. Released in a 0.375 L bottle and recommended well chilled.
Tasting Notes Open and pronounced aroma; forest-blossom honey, exotic fruit, physalis, mango, passion fruit, citrus and delicate meadow herbs; sweet and harmonious palate with refreshing acidity, concentrated fruit, energy and a long finish
Food Pairing Pâtés, foie gras or goose liver, light desserts, and Kaiserschmarrn
