Production Details The Himmelstiege fruit was described as naturally very low yielding because of the barren soil. Grapes for this Spätlese were harvested by hand in late October; the current sheet further describes the harvest as exclusively manual and selective. Spontaneous fermentation and maturation took place in a large wooden cask. Bottling occurred only several years later, followed by continued maturation at the estate at a stable temperature around 10°C and high humidity. Recommended serving temperature is approximately 12°C.
Tasting Notes Current producer sheet: lychee, passion fruit, Golden Delicious apple, dried quince and floral honey; savory-herbal palate with oolong tea, chervil, fennel and toasted almond; finely etched, slender yet concentrated structure, lively dry character, vibrant tension and a long, saline, precise finish. Earlier producer sheet: deep gold with candied pineapple, baked apple, wildflower honey, subtle flint, dried herbs, thyme and oregano; medium-bodied and juicy with a racy-acid finish.
Food Pairing Roast goose, game pâtés, mature cheese or sweet desserts; also suitable as a contemplative wine on its own.
