Production Details Hand-harvested and spontaneously fermented, followed by 6–12 months of maturation on the full lees. Fruit is selectively hand-picked from organically farmed small parcels on steep slopes at 300–600 m in a cool climate, with minimal cellar intervention. The producer page conflicts internally on vine age, describing the vines as both 5–15 years old and 15 years old. Weinfurore lists the Ausbau as steel tank and recommends serving at 7–8°C.
