Production Details Fruit is hand selected into small crates from several estate sites. The factsheet gives an elevation range of 260–380 m. Primary fermentation and malolactic conversion take place in stainless steel; the still wine is then transferred with fine lees, approximately 10% of the total lees, into used two- to three-year-old Austrian-oak vessels of 300 and 2,500 L. In the following year the base wine is bottled with sugar and yeast for traditional bottle fermentation, remains on lees for approximately 18–36 months, is manually riddled, disgorged and finished with a small amount of liqueur d’expédition. Recommended serving temperature is 8–10°C. The producer explains that Brut Reserve is non-vintage and may incorporate smaller portions from other harvests, but does not disclose the base years. A February 2021 diary entry identifies one specific NV release as disgorged in August 2020; that date is release-specific and is not generalized to all NVXX bottles.
