Production Details The producer's English maturation text says alcoholic and malolactic fermentation occurred in stainless steel, followed by bottling in the next spring, bottle fermentation with sugar and yeast, 110 months on the lees, manual riddling and disgorgement. The German version instead adds maturation with fine lees (approximately 10% of the total lees) in used 2,500 L Austrian-oak barrels for around eight months and says bottling occurred in the following summer; these conflicting pre-tirage timelines are preserved rather than reconciled. Recommended serving temperature is 8–10°C. A Falstaff tasting note reproduced on the producer page reports that its reviewed bottle was disgorged on 29 October 2024 after 9.5 years on lees; that bottle-specific observation is not generalized into vintage-wide disgorgement or numeric ageing fields.
Tasting Notes Peter Moser, Falstaff, November 2025: medium yellow-green with silver reflections and a fine mousse; yellow stone fruit, greengage, yellow plum, mineral and white-flower nuances; a tight, elegant palate with white peach, white apple, lively acidity, lemon and a persistent saline finish.
Food Pairing Oysters, tapas, antipasti, seafood, fish and poultry
Critics Ratings 97/100 — Falstaff, Peter Moser, November 2025; 96/100 — James Suckling
