Production Details Fruit comes from multiple estate sites at 260–380 m and is collected in small crates. After gentle pressing, only the heart of the pressing is used. Following stainless-steel fermentation, the still wine is transferred with fine lees amounting to about 10% of the total lees into used two- to three-year-old Austrian-oak barrels of 300 or 2,500 L. The base wine is bottled the following year for traditional secondary fermentation with sugar and yeast, then remains on lees for at least 36 months before hand riddling and disgorgement. Recommended serving temperature is 8–10°C.
Tasting Notes Complex bouquet of fresh green apple, blossom nectar, ripe lime and lightly toasted brioche; persistent mousse, salty freshness, dense and finely structured palate, clean linear profile and a lingering refreshing finish
Food Pairing Oysters, tapas, antipasti, prawns, salmon tartare, fish and poultry
