Production Details The Chardonnay was harvested in September 2017 from Spiegel and Steinberg, received in small crates, pressed very gently, and underwent alcoholic and malolactic fermentation in stainless steel. The base wine was bottled with sugar and yeast in spring 2018 for traditional bottle fermentation, matured on its lees in the historic cellar, and was hand-riddled. The vintage sheet says it was disgorged without sulfur addition and without expedition dosage. Disgorgement timing varied by bottle or release: a producer-hosted tasting note records 10 December 2020, Terry Theise records a bottle disgorged 13 April 2021, and the Wine Advocate note reproduced by CellarHand records a bottle disgorged at the end of October 2020. These bottle-specific dates are not generalized as a vintage-wide disgorgement date.
Tasting Notes Complex aromas of hay, flowers, blossom nectar, fresh green apple, ripe lime and lightly toasted brioche; persistent perlage, salty freshness, dense and compact structure, and a lingering lemon-mineral finish
Food Pairing Braised or steamed shellfish; soft cheese; milk-based desserts
