Production Details Grapes for the sparkling wine are selected in September from several estate sites, chiefly southeast-facing, limestone-rich slopes, and carried in small boxes. The varietal base wines are vinified separately, all undergo malolactic fermentation, and are then blended. Traditional secondary fermentation occurs in bottle, followed by approximately 18–24 months on the lees, manual riddling and disgorgement. A small amount of liqueur d’expédition is added after disgorgement. The factsheet records vineyard elevations of 260–380 m and recommends serving at 8–10°C.
Tasting Notes Light salmon-pink with red-gold reflections and persistent mousse; cherry, wild strawberry, citrus, caramel and yeast notes; fruity, creamy and layered, with elegant acidity, mineral extract and a harmonious structure.
Food Pairing Oysters, tapas, antipasti, shrimp skewers, salmon tartare, fish and poultry.
Critics Ratings 93/100
