Production Details Current producer method: grapes from several estate sites are harvested into small cases and gently pressed, using only the heart of the pressing. Primary fermentation and malolactic fermentation occur in stainless steel. The still wine is then transferred with fine lees, approximately 10% of the total lees, into used two- to three-year-old Austrian-oak casks of 300 L or 2,500 L. In the following year it is bottled with sugar and yeast for traditional secondary fermentation, hand-riddled and disgorged; a small amount of liqueur d’expédition is added. The technical sheet reports 260–380 m elevation, acidity of 8.5 g/L without specifying its analytical basis, the qualitative residual-sugar designation “brut,” and an 8–10°C serving range. Producer sources conflict on lees contact: the current German page and German sheet state approximately 18–36 months, the current English page states 18 months followed by a month-long riddling process, and the 2021 producer diary describes approximately 18 months to two years, with exceptional lots potentially much longer; therefore no exact NV-wide ageing-days value is proposed. Release-specific records include an August 2020 disgorgement offered in February 2021; a predominantly 2017-based release disgorged March 2022 after 47 months sur lattes; a primarily 2018-based release containing 35% reserve wines and disgorged August 2023; and a 2019-based release containing 45% reserve wines and disgorged September 2023. Vinous reported 9 g/L dosage for the September 2023-disgorged release it tasted. These disgorgement, dosage and ageing observations are retained only as release-specific context, not as NV-wide canonical measurements.
